It’s been a while since I’ve shared a recipe on here! Today, I am sharing this delicious, homemade, buffalo chicken pizza recipe.
We usually have pizza once a week in our home – almost every Sunday night. While we do have a favorite local spot, every now and then we like to mix it up and make our own pizza.
This recipe is fairly easy and it is more fun with two people so think of it as something fun to do with your significant other, friends, or family!
Pizza Ingredients
- 1 Pizza Crust – we like Trader Joe’s, but any will work!
- 1-2 Chicken Breasts
- 2 Shishito Peppers – any green pepper with a little kick will do if you can’t find these.
- 2 tsp Celery Salt
- 3 Roma Tomatos
- 1.5 Cups Shredded Mozzarella Cheese
- 2 tsp Olive Oil
- 2 Tbs Butter
- Dash of Pepper
- Pinch of Salt
Dipping Sauce Ingredients
- 5 tsp Ranch Spice – we buy this Ranch dressing packet
- 4 Tbs Sour Cream
- 2 Tbs Honey
- 2 Tbs Siracha (optional)
Start by preheating the oven to 450 degrees. Pat the chicken dry and cut into bite sized pieces. Toss in a bowl with celery salt, 1 Tbs of Ranch spice, and a dash of salt and pepper.
Meanwhile, heat a drizzle of olive oil over medium high heat. Wash and dry all produce. Dice tomatoes then core, seed, and dice peppers.
When the olive oil is heated, cook the chicken with green peppers until the chicken is cooked through. This will be about 5-10 minutes depending on the size of the chicken pieces. Once the chicken/pepper combo is cooked, season with salt and pepper then remove to a plate.
With the same pan, reduce the heat to medium and add the diced tomatoes, 3 Tbs water, and cook until the tomatoes become slightly saucy. Then, add 1 Tbs of butter until melted.
Follow the instructions on your pizza crust to get it ready for the toppings.
Spoon the sauce mixture on to the pizza crust, top with chicken/pepper mixture, then mozzarella. Now, you’re ready to pop this in the oven for about 12 minutes, or until the cheese and crust start to brown.
Helpful Tip: Sometimes we cook our pizza crust for 2-3 minutes prior to adding the toppings to be sure we have a nice, crispy crust without the toppings getting too done!
While the pizza is cooking, it’s time to make the dipping sauces.
In a small bowl, microwave 2 Tbs butter until just melted, about 30 seconds. Then, stir in the honey, hot sauce, and optional sriracha until well combined.
In a separate small bowl, mix 2 tsp ranch spice with the sour cream. Add water, about 1 tsp at a time, until you reach a drizzling consistency.
Once the pizza is done cooking, remove from oven and slice! Drizzle the sauces on top of each slice, or dip pizza into the sauces while eating, and enjoy!
Helpful hint: We usually eat this pizza with a fork because it can be a little messy, but it’s delicious!
